If you shoot raw images recorded in the largest color space and bit depth your camera allows (usually Adobe RGB and 12-16 bits) one purpose of using a large color space (Adobe RGB or ProPhoto) and 16 bit color for processing is to generate smoother color transitions/ramps in the final image that will generally be distributed in sRGB or printed with whatever the gamut of the ink jet printer.
