You'll want to download the OpenEMR package from here: -emr.org/wiki/index.php/OpenEMR_5.0.0_Ubuntu-Debian_Package_Installation_with_PHP7. Under the heading, Command Line Ubuntu/Mint Installation, type in the commands in red. I always got the error that it didn't install fully, so type in that extra command mentioned in the instructions. It should proceed on. Eventually it should ask you to create a MySQL root password, so be sure to set it here. It should finally say OpenEMR was successfully installed and configured. If you browse on your browser to right now as the instructions state, it won't work. That's because port 80 isn't open by default on your VM. Go back to VirtualBox and find Settings and Network. It'll be on NAT. Hit Advanced, then Port Forwarding. Make a new rule that opens up port 80 on the host and the guest. Port 80 is the default port for http (unsecured) webpages. I'll talk about networking/port forwarding in more detail later, but this is just to make sure OpenEMR launches, for now. It should work now.
