I can get I^2C to work with RHProxy (for the most part), the bigger problem is the GPIO. Even when configured as read in the BIOS I cannot read the pins - they're always high. For the outputs, regardless of the BIOS setting they revert to the some default output (high/low) when the pin is closed (see: -community.org/discussion/4864/rhproxy-windows-10-iot-gpio-issues).
